This pie recipe is perfect for summertime or 4th of July celebration. This recipe is straight from my grandmother's recipe book. I have memories of my aunt baking these pies when we would spend summers at her lake house. It's nice to have those memories and make these pies to carry on the tradition. We had a housewarming party when we moved back to Arizona. I made this recipe, and everyone went crazy over it! It is so super simple to make but SO GOOD!
Ingredients:
1/2 cup Karo syrup (clear, light)
2 cups water
1/2 cup corn starch
1/4 tsp. salt
2 cups of white sugar
1.5 quarts of fresh strawberries
3oz. package of strawberry Jello
16 oz. cool whip tub
(2) 9in frozen pie crust or two homemade pre-cooked pie shells
Instructions:
Prepare your pie crust as directed, cool, and set aside.
Cook all ingredients in a pot on medium-high heat (except fresh strawberries, jello & cool whip) until clear.
Add the 3oz. box of jello to hot mixture and mix well.
Remove from heat and chill before pouring over strawberries.
Cut strawberry steams off cut in half and set aside.
Once cool, place the strawberries in the cooked pie shell, pour the mixture over the strawberries, and chill overnight.
Fill the rest of the pies up with a cool whip as the top layer.
This Recipe is so easy and so good, it's just too good not to try!!
