These blueberry muffins are always such a great quick breakfast or afternoon snack around our house. They are moist and flavorful with a yummy crumble topping.
I use sourdough discard in this recipe, not an active sourdough starter. I keep a jar in the fridge with my sourdough discard just for discard recipes such as these. I take it out of the fridge and add it directly to my ingredients. No need to feed it or wait for it to be ready!
